Special occasions like festivals and celebrations are a time that serves as excuses for the family to come together and rejoice.
All members of the family look forward for occasions of celebration and get together. As men of the household busy themselves in preparation of the festivities the women are huddled in the kitchen sharing stories and anecdotes while preparing the mouthwatering dishes.
The Indian traditions are full of festivities throughout the year leading to preparation of special food frequently. But just as these festivities are based on a deep understanding of science and spirituality so is the food that is prepared.
Mostly being a vegetarian country the vast expanse of its geographical setting has different cuisines specially suited to that locality based on availability of food stuff and climatic requirements.
A typical festive food will be a balanced diet that will contain all nutrients from the food triangle. Carbohydrates in the form of food grains, proteins in the form of cottage cheese and pulses, fresh vegetables and fruits , salads etc.
In addition it will contain all flavours too. The spicy, sour and tangy, a bit of salt and the favorite sweet along with the unforgettable buttermilk in the end lends a splash of flavours to the already appetizing meal.
In our village a traditional meal will include puri’s with Chana gravy, rice with Dal, 2-3 vegetables prepared from locally grown plants, vegetable fritters, pickle, and sweet dish usually made from Chana Dal or green grams. The ensemble is incomplete without the tangy cocum sherbet all served on a banana leaf. Making the meal a power packed, delectable and savoury balanced diet along with being eco-friendly too.
